Contrary to popular belief, fresh produce doesn’t have to break the food budget, particularly if you count on potatoes. Pound for pound, potatoes are one of greatest nutritional values in the produce department. At about $.25 per serving, potatoes serve up essential vitamins and minerals, fiber, and antioxidants and are fat-, sodium- and cholesterol- free.

Here are some potato ideas that can help you cut your shopping bill without sacrificing nutrition… to the tune of no more than $2.50 per serving!

How do you top a good ol' Baked Potato and keep it healthy? Let us count the ways!

  • Salsa + Low Fat sour cream
  • Vegetarian Chili
  • Marinara sauce and parmesan cheese
  • Ground turkey mixed with taco seasoning, olives and tomatoes, and topped with low fat shredded cheddar
  • Steam veggies with olive oil and herbs

Cook Once—Eat Twice!
Think “repurpose”: last night’s rotisserie chicken, shredded, mixed with sautéed diced onions and green peppers; crumbled meatloaf; chicken fajitas; sloppy Joes.The key is to make extra potatoes to carry you over to the next meal. Try these meal ideas:

  • Sunday’s Roasted chicken and potato dinner becomes Monday’s chicken, potato, veggie scramble.
  • Tuesday’s pork tenderloin and potato dinner becomes Wednesday’s BBQ pork and potato wrap, complete with shredded cabbage and carrots.
  • Thursday’s mashed potatoes get topped with Friday’s ratatouille or mixture of sautéed seasonal vegetables.
  • Saturday’s garlic roasted potatoes top the Caesar salad (instead of croutons) during Sunday’s lunch.
