Ingredients

  • 20 oz. (about 18) baby red potatoes
  • 4 slices center-cut bacon or turkey bacon
  • 1 cup chopped red and green bell peppers
  • 1 cup chopped onion
  • 1 Tablespoon chopped garlic
  • 1/4 teaspoon each salt and black pepper
  • 4 dashes smoked paprika

Preparation

  1. Place potatoes in a microwave-safe dish with 2 Tablespoons water. Cover and microwave for 8 minutes, or until mostly softened.
  2. Meanwhile, bring a large skillet to medium heat. Cook bacon until crispy, about 2 minutes per side. Chop or crumble bacon.
  3. On a large cutting board, gently smash potatoes with a spatula (or other flat utensil), breaking them into bite-sized pieces. (Roughly chop, if needed.)
  4. Discard excess bacon grease from skillet. Spray with nonstick spray and bring to medium-high heat. Add bell peppers, onion, and garlic. Cook and stir until veggies have slightly softened and browned, about 6 minutes.
  5. Raise heat to high. Add smashed potatoes, chopped/crumbled bacon, salt, and pepper. Cook and stir until potatoes are lightly browned and slightly crisp, about 5 minutes.
  6. Sprinkle each serving with a dash of paprika, and serve!
