Description

Fragrant with fresh rosemary and garlic, these roasted potatoes are perfect alongside roast lamb or chicken.

Ingredients

  • 2 lbs russet potatoes, peeled and cut into 3/4-inch chunks
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

Preparation

  1. Preheat oven to 450ºF and place a rack in the upper third of the oven.
  2. Toss potatoes in a large roasting pan with oil, garlic, rosemary, salt and pepper.
  3. Roast potatoes, turning occasionally with a metal spatula, until golden brown and tender, 30 to 35 minutes.

I make this all the time, very simple, you can not mess it up, but I never peel mine. Not sure you need a recipe, but if you do, more olive oil, sorry but a tablespoon won't cut it. Delicious and great side.

Extremely good. Made them for the first time tonight and they were fantastic. I didn’t have any cloves on hand, so I used 1/4 tsp garlic powder and it worked just as well: I left the skins on as well. They make a make a wonderful side or snack :)
