Scalloped potatoes can be made ahead of time, and then gently reheated, however they are best served when they are freshly prepared as the cream and potatoes form a sauce for the potatoes. Allowing the potatoes to sit in the fridge or the freezer too long will result in the potatoes absorbing a lot of the liquid. While still great, they are much better prepared fresh.
