Scalloped potatoes are potatoes that have been thinly sliced and cooked in a flavorful liquid that reduced and infuses the potatoes with seasoning. Typically, they are cooked in a casserole dish or a Dutch oven, although any pan with sides that are about 1-1/2 – 2-1/2 inches tall will work. If making them in a Dutch oven just be sure the potatoes do not stack higher than 3 inches to ensure even cooking.
