Imperial PDX in Portland, Oregon played with fire and won big on flavor with their renowned Ember-roasted Potatoes, reminiscent of campfire cooking. They start by charring yellow potatoes in a wood-fired grill, then cooling, smashing and browning in butter and oil. Then the potatoes are finished off with a sprinkling of dill and sea salt and served up in a mini cast iron skillet.2 Check out our take on Campfire Potatoes for inspiration. The depth of flavor, crispy outer layer and soft center will keep patrons coming back for more.
