Description

Buffalo chicken stuffed potatoes super easy weeknight dinner & perfect thing to prep during the week!

Ingredients

  • 2 each (5.3 ounce) Medium russet potatoes
  • 1 cup (8 ounces/ 227g) shredded buffalo chicken
  • 3 tbsp (45ml) plain Greek yogurt
  • 1 ½ tbsp (3g) green onion
  • ¼ cup (38g) red onion
  • ¼ tsp (~1g) garlic powder
  • Sea salt
  • Avocado oil
  • Optional: gorgonzola cheese

Preparation

  1. Preheat oven to 400 °F.
  2. Wash potatoes. Poke small holes in the sides of both potatoes.
  3. Coat with a little avocado oil and sea salt.
  4. Place in the oven to bake for 55 minutes to an hour (depending on the size of the potato)
  5. Prepare buffalo chicken mixture by combining buffalo chicken, Greek yogurt, green onion, red onion, garlic powders, and sea salt to taste.
  6. Once potatoes have finished cooking, cut in half and place buffalo chicken in the middle.
  7. Top with gorgonzola cheese and a little green onion. Enjoy!
