Cheddar and Chive Potato Crackers

Serves 12 (48 crackers, 4 crackers per serving)

Ingredients

  • 1-1/2 cups All Purpose Flour
  • ¾ cup Shredded Cheddar Cheese
  • ¾ cup Potato Flakes
  • 2 tablespoons Melted Butter
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • ¼ teaspoon Cayenne Pepper
  • ½ teaspoon Smoked Paprika
  • ¾ cup Cold Water
  • ¼ cup Chives, chopped

Preparation

  1. Preheat the oven to 400 °F
  2. Place all ingredients, except chives together in a food processor or mix by hand until a smooth dough is formed, remove from the food processor if using.
  3. Add the chives and knead the chives into the dough by hand.
  4. Allow the dough to rest for 5-10 minutes covered.
  5. Roll the dough out on a lightly floured surface to 1/8 inch thick.  Cut into desired shapes using a pizza cutter or fluted pasta cutter (a knife will work as well).
  6. Using the end of a wooden skewer or the tines of a fork, dock the dough by creating holes in each cracker evenly.
  7. Place the crackers onto a baking sheet lined with aluminum foil, parchment paper, or a silpat.  Bake at 400 °F until the crackers are golden, about 10-12 minutes.  They will get crispy as they cool.  Allow to cool completely before serving.
