Crab Filled Potato Canoes

Ingredients

  • 6 potato skins
  • 300 g crab
  • 1/3 onion, finely chopped
  • 1/2 cup of mayonnaise
  • 1/3 cup of sour cream
  • 4 chopped sprigs of parsley (leaves)
  • 1 Tablespoon of mustard
  • 3 Tablespoons of vinegar
  • 3 Tablespoons of olive oil
  • Salt and pepper to taste

Preparation

  1. Place the potato skins on a tray and varnish them with vinegar mixed with olive oil and a pinch of salt.  
  2. Bake at 375° F for 40 minutes or until golden brown and crunchy.  
  3. In the meantime, mix the onion, mayonnaise, sour cream, mustard and parsley; mix and season.  
  4. Once ready, fill the potato skins with the crab. Decorate with fresh parsley and serve with salad.
