Crab filled canoes are a delightful twist on your traditional potato skins.
6 potato skins
300 g crab
1/3 onion, finely chopped
1/2 cup of mayonnaise
1/3 cup of sour cream
4 chopped sprigs of parsley (leaves)
1 Tablespoon of mustard
3 Tablespoons of vinegar
3 Tablespoons of olive oil
Salt and pepper to taste
| Cook Time: 40min
Place the potato skins on a tray and varnish them with vinegar mixed with olive oil and a pinch of salt.
Bake at 375° F for 40 minutes or until golden brown and crunchy.
In the meantime, mix the onion, mayonnaise, sour cream, mustard and parsley; mix and season.
Once ready, fill the potato skins with the crab. Decorate with fresh parsley and serve with salad.
