Curry Potatoes with Prawns

This wonderful exotic recipe of curry potatoes with Prawns works well in any season. Try substituting with another protein or go with tofu, eggplant or mushrooms for a vegan option.
2 Tablespoons olive oil
1 onion, diced
1/4 cup grated ginger
1 clove garlic, minced
1 Tablespoon curry powder
1.5 lbs Petite/Creamer Potatoes, halved
2 cups low fat coconut milk
12 prawns, peeled and deveined
1 cup baby spinach
Salt and pepper to taste
Prep Time: 5min | Cook Time: 35min
Sauté onion with oil, ginger and garlic for 3-4 minutes over medium-high heat until soft and translucent.
Add curry powder and potatoes and continue to sauté 1-2 minutes.
Add coconut milk and simmer for 20 minutes then add prawns and spinach and continue to simmer for another 10 minutes.
Prawns and potatoes should be cooked and sauce thickened. Serve over rice.
