Description

Crispy chicken in a fragrant orange glaze with chilies and toasted sesame, scallions and mandarin oranges all served on a bed of crunchy waffle fries.

Ingredients

For the Orange Glazed Chicken

  • 2.2 lbs. (1kg) Breaded Frozen Popcorn Chicken
  • 1 cup (240ml) Orange Juice
  • ½ cup (100g) Granulated Sugar
  • 3 tablespoons Rice Wine Vinegar
  • 2 tablespoons (30ml) Light Soy Sauce
  • ½ teaspoon (1g) Ginger, chopped
  • ½ teaspoon (1g) Garlic, chopped
  • ½ teaspoon (1g) Crushed Red Chili Flakes
  • ½ teaspoon (1g) Gochugaru (optional)
  • 1 teaspoon (2g) MSG (optional)
  • 1 tablespoon (3g) Orange Zest
  • 1 tablespoon (4g) Cornstarch

Fries

  • 2.2 lbs. (1kg) Frozen Waffle Fries

As Needed

  • Vegetable Oil for Frying
  • 2 tablespoons (8g) Fine Sea Salt

Garnish

  • 1 tablespoon (2g) White Sesame Seeds
  • ¼ cup (12g) Green Onions, sliced

Preparation

  1. Preheat a fryer to 350 °F (176 °C), fry the popcorn chicken for 7-8 minutes or until the internal temp is 165 F (74 °C) and golden.  Drain the chicken pieces and keep warm.
  1. To make orange sauce: In a medium pot, add orange juice, sugar, vinegar, soy sauce, ginger, garlic, red chili flakes and gochugaru if using. Heat for 3 minutes.
  2. In a small bowl, whisk 1 Tablespoon of cornstarch with 2 Tablespoons of water to form a paste. Add to orange sauce and whisk together. Continue to cook for 5 minutes, until the mixture begins to thicken. Once the sauce is thickened, remove from heat and add the msg and orange zest.
  1. To fry the waffle fries, fry the fries in the vegetable oil preheated to 375 °F (190 °C) for 4-6 minutes or until they are golden brown and crispy.  Drain the fries and place them into a large bowl.  Season them with the salt and toss to combine.  Arrange the fries in a serving bowl or on a platter.
  2. Toss the chicken in the orange sauce.
  3. Top the fries with the orange chicken and garnish with the sesame seeds and green onions. Serve immediately. Enjoy!
