Ingredients

  • 1 large russet potato
  • salt (prefer popcorn salt for these as it’s ultra fine grain)

Preparation

  1. Peel potato & then use a mandolin or food processor to cut into thin slices
  2. Place slices in a bowl of water to keep from browning while you work
  3. Place a piece of parchment paper on a glass plate
  4. Spread out potato slices on parchment in a single layer
  5. Sprinkle with salt if desired & microwave on high 3-7 minutes (this depends on your microwave & thickness of your slices)
  6. They are done when crisp & slightly golden
