Ingredients

  • 6 russet potatoes or potato type of your choice (try red, yellow, white or fingerlings)
  • 6 cloves of garlic
  • 8 sprigs fresh thyme, picked from stems
  • 5 Tablespoons olive oil
  • Salt and freshly ground pepper to taste

Preparation

Made with russet potatoes.

  1. Cut the russet potatoes into wedges.
  2. In a large bowl toss the potatoes with garlic, thyme, olive oil, salt, and pepper.  Arrange the potatoes on a baking sheet and place them in the oven.
  3. Cook at 375 °F for 30-35 minutes or until the potatoes are golden brown.
