Ingredients

  • 1 teaspoon olive oil
  • 1 20 oz. bag of hash browns
  • 1lb. turkey sausage
  • 1 large jalapeño, deveined and deseeded
  • 2 cups Bisquick
  • 2 large eggs
  • 1 1/2 cups shredded mild cheddar cheese
  • 1/4 teaspoon salt

Preparation

  1. Preheat oven to 350 °F.
  2. Add olive oil to a skillet over medium heat.
  3. Add hash browns and cook for 7 minutes, stirring occasionally.
  4. In a bowl, combine sausage, jalapeño, Bisquick, eggs, cheese, cooked hash browns and salt. Mix using your hands to ensure it’s well incorporated.
  5. Using a spoon or cookie scoop, create 2-inch balls and place on a baking sheet lined with parchment paper.
  6. Bake for 20 minutes, until browned.

I have made balls similar to this but they tend to crumble. Adding the Bisquick was the ingredient to hold them together. Also, I chill 30 minutes making it just a little easier to handle. I make them just a little smaller so they are the perfect little breakfast popper when on the go! They are also good for supper with country gravy!! Thanx for sharing!raf
