Italian Scalloped Potatoes

Ingredients

  • 1 carton/2.25 lbs Au Gratin Potato Casserole, dehydrated
  • 5 quarts water, boiling
  • 1/4 cup unsalted butter
  • 1 Tablespoon Italian seasoning/pizza blend (no salt)
  • 2 Tablespoons rosemary, dried

Preparation

  1. Add boiling water and 1/4 cup unsalted butter to a 2 1/2″ deep full-size steam table pan.
  2. Stir in sauce mix from casserole box until dissolved, then add Italian seasoning/pizza blend and dried rosemary and stir.
  3. Add dehydrated Au Gratin Potato Casserole and stir.
  4. Bake uncovered in convection oven at 300° F for 45-60 minutes.
    CCP: Hold and serve at 140° F or higher
