Transform leftover mashed potatoes into savory waffles that are crispy on the outside and soft on the inside! These simple and delicious waffles can be eaten on the run or topped at home for a quick meal or snack to fuel an active lifestyle.
1.5 cups leftover cold mashed potatoes
(optional) ½tsp to 1tsp additional spices like turmeric, curry, garlic, chili powder
Prep Time: 8min | Cook Time: 12min
Heat large waffle iron and generously coat with cooking spray.
Mix together egg and cold mashed potatoes until combined.
Spread mixture out on waffle iron, lower lid, and cook for 12 minutes or until golden.
Turn off waffle iron heat but allow the waffle to cool in closed iron for 5 minutes.
Carefully remove with a fork. Eat plain or with any type of topping you desire.
May also be eaten cold/room temperature as workout fuel.
May be frozen, defrosted, and heated back on a tray in a toaster oven.
Can be used as “bread” for a sandwich or topped with additional ingredients as desired.
Makes 1 large waffle (4 squares); each serving is 2 squares.
