I would probably use fresh tomatoes - but only cherry tomatoes, cut in half, or the Campari tomatoes which taste like the best fresh summer tomatoes! Other than that, this salad is wonderful - and full of healthy, delicious-tasting fiber!

This reminds me of a dish I haven't made in awhile. Similar because I use gr.beef, spinach, bell peppers no beans but I add a couple of eggs also and lots of garlic and onions. The potatoes are cooked and served on the side with lots of margarine or butter. I also finish the dish with some sour cream mixed in with the gr.beef. I will make this dish again very soon as both Hubby and I really like it. This recipe sounds great and I look forward to trying it.

I use both sundried tomatoes and fresh cherry tomatoes plus a little red wine vinegar as well as mushrooms and peppers
