Kid-friendly Cheesy Mini Gratin Potato Stacks made individually in a muffin pan. Perfect to serve as a snack for the kids or to throw together on a weeknight, but also fancy enough for a special occasion.
4 medium Yellow potatoes thinly sliced
4 tbsp (¼ cup / 60 ml) cream
4 tbsp (¼ cup / 22.5 grams) grated fresh parmesan
Cooking/ Olive oil spray
2 (10g) garlic cloves crushed/minced
1/2 teaspoon salt
1/2 teaspoon black pepper
Prep Time: 10min | Cook Time: 30min
Preheat oven to 350°F (177 °C).
Grease a 12-hole muffin pan with olive oil/cooking spray. Add cream (4 tbsp), parmesan (4 tbsp) and garlic (2 cloves) to potatoes and mix, making sure slices are well coated. Add salt and pepper to taste.
Divide potato mixture evenly between muffin pan holes.
Bake for 30 mins or until potato is cooked through and the tops are crisp.
Optional to sprinkle Rosemary or Scallions to taste.
