Hasselback potatoes are the perfect combination of baked potato + crispy baked potato chip!
1.5 lbs. petite yellow potatoes
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder
Prep Time: 10min | Cook Time: 45min
Heat oven to 400 °F.
Carefully slice the petite potatoes in about 1/8th of an inch thick segments without cutting through.
Mix olive oil, salt, pepper, and garlic powder.
Use a pastry brush to coat the potatoes with the olive oil mixture.
Bake the potatoes for 40-45 minutes.
After 40-45 minutes pull the potatoes from the oven and let them cool for 3-5 minutes before eating.
Salt to taste.
