Mini potato skins for the easiest game day snack! Something everyone will love and simple to make.
2 medium russet potatoes
1 cup Bacon, cooked and crumbled or Prepared Bacon Bits can be subbed
1 cup shredded cheddar cheese
1 teaspoon Sea salt
1/2 teaspoon pepper
Avocado oil spray
3 tbsp green onion (chopped 1/4 inch)
Prep Time: 10min | Cook Time: 40min
Preheat oven to 400 °F.
Cut 2 russet potatoes into 1/2 inch round slices. Spray with a little avocado oil with sea salt and pepper.
Cook for 15-20 minutes then flip the potatoes and cook for an additional 15-20 minutes or until they are golden.
Bring out of the oven and top with shredded cheddar cheese and crumbled bacon on each potato round.
Place back in the oven for the cheese to get melty. 3-5 minutes.
Top with red pepper flakes and the chopped green onion (optional). Enjoy!
