Ingredients

  • 1 Tablespoon olive oil
  • 1 clove minced garlic
  • 8 oz. crème fraiche
  • 1/4 cup heavy cream
  • 1 lb small yellow potatoes
  • 1/2 teaspoon salt and pepper
  • 4 oz. Raclette, grated

Preparation

  1. Heat oven to °F
  2. Place olive oil and garlic in a large cast iron skillet
  3. Slice potatoes in thin even rounds (a mandolin works the best)
  4. Whick together the crème fraiche and the cream
  5. Layer half of the potatoes, overlapping, in the skillet
  6. Top with half of the crème fraiche mixture
  7. Add remaining potatoes
  8. Add salt and pepper
  9. Bake at 400 °F for 45 minutes
  10. Top with grated raclette, and place under the boiled until the cheese is golden brown and melted (about 1-2 minutes)
  11. Serve with cornichons
