Step up your brunch game with homemade potato pancakes!

Ingredients

  • 1 lb. (approximately 3 medium potatoes) of russet potatoes
  • 4 oz smoked salmon
  • ¼ cup creme fresh
  • ⅕ lb. of yellow or sweet onion
  • 1 tbsp fresh chives
  • 1 egg
  • 1 tbsp flour
  • ¼ cup cooking oil

Preparation
Prep Time: 15min | Cook Time: 5min

  1. Start by grating the russet potatoes.
  2. Squeeze out the moisture from the grated potatoes.
  3. Add potatoes to a bowl with grated onion, egg, salt, and pepper
  4. In the bowl with the leftover potato moisture drain the water, but keep the starch at the bottom.
  5. Mix the starch with the potato mixture to act as a binding agent.
  6. Fold in a tbsp of flour to the mixture.
  7. Form the mixture into patties.
  8. Fry the patties in oil till golden brown.
  9. When golden brown remove them from the oil and place them on a paper towel to soak up excess oil.
  10. Top the potato pancakes with salmon, creme fresh, and chives.
  11. Salt to taste.
