Ingredients

  • 1 lb. (approximately 3 medium potatoes) of russet potatoes
  • 4 oz smoked salmon
  • ¼ cup crème fraîche or sour cream
  • ⅕ lb. of yellow or sweet onion, diced
  • 1 tbsp fresh chives
  • 1 egg
  • 1 tbsp flour
  • ¼ cup cooking oil

Preparation

  1. Start by grating the Russet potatoes, ensuring to squeeze out the moisture. Reserve the liquid.
  2. Add the grated potatoes to a bowl along with the onion, egg, salt, and pepper.
  3. In the bowl with the leftover potato liquid, drain the water, keeping the starch at the bottom.
  4. Mix the starch with the grated potato mixture to act as a binding agent.
  5. Fold in a tbsp of flour to the mixture.
  6. Form the mixture into patties.
  7. Fry the patties in oil till golden brown.
  8. When golden brown remove them from the oil and place them on a paper towel to soak up excess oil.
  9. Top the potato pancakes with salmon, crème fraîche, and chives.
  10. Salt to taste.
