Ingredients

  • ¼ cup butter
  • ¼ cup flour
  • 1 teaspoon salt
  • 1 teaspoon parsley
  • 1 ¼ cup low-fat milk
  • 1 cup chicken broth
  • 1.5 lbs. petite (creamer) potatoes, thinly sliced
  • 2 cups ham, cooked and diced
  • 1 cup low-fat mozzarella cheese (or cheese of choice), shredded

Preparation

  1. In a large saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Cook one minute.
  2. Stir in salt and parsley.
  3. Add milk and chicken broth and continue cooking over medium heat, whisking often, until thickened.
  4. Preheat oven to 375°F and lightly grease a 9″x13” casserole dish.
  5. Combine sliced potatoes and ham in casserole dish and cover evenly with sauce.
  6. Sprinkle with cheese and bake for 40 to 45 minutes until potatoes are tender and cheese is golden brown. Let sit for 5 to 10 minutes before serving.

Variations

How to make this recipe with frozen potatoes: Arrange 24 ounces of frozen waffle fries on a baking sheet lined with aluminum foil.  Bake at 450 °F for 15 minutes or until golden and crispy.  Replace the cooked waffle potatoes for the sliced potatoes in step 5.  Continue on with the recipe as follow, however because the potatoes are already cooked, casserole only needs to bake in the 375 F oven for 15-20 minutes.
