Ingredients

  • 1 medium russet potato
  • 4 oz. meat chili (prepared or canned)
  • 1 tbsp shredded cheddar cheese
  • ¼ cup corn chips
  • 1 tsp Sea Salt
  • 1 tsp olive oil

Preparation

  1. Heat oven to 450 °F.
  2. Spray or rub your potatoes in olive oil.
  3. Poke potatoes with a fork all over to help with equal cooking.
  4. Bake the potatoes for 60 minutes.
  5. After 60 minutes pull the potatoes from the oven and let them cool for 5 minutes.
  6. After cooling the potatoes cut them open lengthwise.
  7. Heat chili according to prepared label instructions.
  8. Top with chili.
  9. On top of the chili add crushed Frito chips and shredded cheese to get a true taste of Texas.

Notes

  • This can work just as well with meatless chili if you want to make it for people that don’t eat meat.
