Two crispy fried hash brown patties stuffed with corned beef and pastrami, sauerkraut, and a creamy “coleslaw-like” dressing. Combining the best of the Reuben and Rachel!


  • 3 cups Cole Slaw Dressing
  • 12 cups Cole Slaw Cabbage Mix
  • 48 Frozen Hash Brown Patties (Deep-fried and held hot)
  • 96 slices Pastrami
  • 6 cups Corned Beef, Sliced (fully-cooked)
  • 4-1/2 cups Sauer Kraut (drained)
  • 24 slices of Swiss Cheese
  • 3 teaspoons Everything Bagel Spice


1. In a mixing bowl, combine cole slaw dressing with cole slaw cabbage mix. Set aside, keep chilled.
2. On a parchment-lined sheet, build each hash brown spudwich in the following order:

1 hash brown patty, fried
2 slices pastrami, sliced
1/4 cup corned beef, fully cooked
3 Tablespoons sauer kraut
1 slice Swiss cheese

3. Place partially assembled spudwiches in 375°F oven, and heat until sandwich is hot and cheese is fully melted.
4. Remove spudwiches from oven, and top each with 1/2 cup cole slaw and remaining fried hashbrown patties. Sprinkle tops of spudwiches with everything bagel spice.
5. Serve spudwiches hot.
