Two crispy fried hash brown patties stuffed with corned beef and pastrami, sauerkraut, and a creamy “coleslaw-like” dressing. Combining the best of the Reuben and Rachel!
1. In a mixing bowl, combine cole slaw dressing with cole slaw cabbage mix. Set aside, keep chilled. | |||
2. On a parchment-lined sheet, build each hash brown spudwich in the following order:
1 hash brown patty, fried |

3. Place partially assembled spudwiches in 375°F oven, and heat until sandwich is hot and cheese is fully melted. | |||
4. Remove spudwiches from oven, and top each with 1/2 cup cole slaw and remaining fried hashbrown patties. Sprinkle tops of spudwiches with everything bagel spice. | |||
5. Serve spudwiches hot. |
