“Potatoes are a key component of my nutrition toolbox, as potatoes are a whole food, dense in carbohydrates and key nutrients like potassium, vitamin C, and complete protein (a surprise for many!). The chef side of me loves potatoes as they are easy to prepare, a familiar food and versatile in recipes, from roasted potatoes to cold potato salad.” – Allen Tran
