Ingredients

  • 4 medium russet potatoes, scrubbed and dried
  • ¼ cup dairy-free butter

Preparation
Prep Time: 5min | Cook Time: 45min

  1. Preheat oven to 400ºF.
  2. Place potatoes on a baking sheet. Bake for 45-50 minutes, until fork tender.
  3. Slice open each potato. Place 1 Tablespoon dairy-free butter in the center of each potato.

Taco Stuffed Baked Potatoes

Switch up your taco night with these wholesome Taco Stuffed Baked Potatoes! Use leftover baked potatoes to whip up this flavorful dinner in an additional 10 minutes from the recipe above (serves 4).

Ingredients:

  • 4 medium russet potatoes, baked
  • 1 15-ounce can black beans, drained and rinsed
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt
  • 2 cups romaine lettuce, chopped
  • 1 avocado, sliced
  • ¼ cup salsa
  • ¼ cup dairy-free shredded cheese
  • Fresh cilantro, for garnish

Preparation:

  1. In a medium bowl, add black beans, chili powder, cumin, and salt. Stir to combine.
  2. Stuff each potato with ¼ of each topping: ½ cup lettuce, ½ cup black beans, ¼ avocado, 1 tablespoon salsa, and 1 tablespoon dairy-free cheese. Sprinkle with cilantro.
