The loaded twice baked potato casserole is all of your favorite baked potato toppings in one easy to prepare dish.

Ingredients

  • 2 lbs potatoes ( baby reds or gold would be delicious) baked and quartered – seasoned with salt and pepper
  • 2 cups of steamed broccoli florets
  • 2 cups of shredded sharp cheddar
  • 1 cups of sour cream
  • 6 slices of bacon, cooked and crumbled
  • Chives or scallions, to top

Preparation
Prep Time: 10min | Cook Time: 25min

  1. Heat oven to 350°F
  2. Butter a casserole dish, add potatoes, broccoli, cheese, sour cream, and top with bacon
  3. Bake in a pre-heated oven for 25 minutes
  4. Top with chives or scallions
