Description

This Vegan African Peanut Stew makes for the perfect meal with a tomato peanut base and is filled with potatoes and kale. It’s Gluten Free and ready in just 40 mins.

Ingredients

  • 1 whole medium Yellow Onion, diced (150 g)
  • 1 Tablespoon (15 mL) Olive Oil
  • 1 Tablespoon (7 g) Ginger, minced
  • 1 Tablespoon (7 g) Garlic, minced
  • 1 Teaspoon (3 g) Cumin, ground
  • 1 Teaspoon (3 g) Salt
  • 1/2 Cup (120 g) Peanut Butter
  • 1/2 Cup (120 g) Tomato Paste
  • 1 Can (15 ounces) Diced Tomatoes
  • 4 Cups (960 mL) Vegetable Broth
  • 6 whole Red Potatoes (32 ounces) peeled, halved, and cut into quarters
  • 1/4 cup (60 g) Peanuts, crushed
  • 1 Whole Lime, zest and juice
  • 2 Cups Kale (135 g), roughly chopped

Preparation

  1. Heat oil over medium heat in a pot and add onions. Cook for a few minutes.
  2. Add ginger and garlic. Cook for 1-2 minutes. Add cumin and salt.
  3. Add peanut butter, tomato paste, diced tomatoes, and chicken broth.
  4. Bring to a boil and add potatoes.
  5. Simmer for 15-20 minutes or until potatoes are fork-tender and cooked through.
  6. Add kale, and continue to cook for 1-2 minutes,
  7. Serve garnished with lime zest, lime juice, and crushed peanuts; drizzle with Sriracha for a spicy kick (optional)
