Try this super simple loaded baked potato bar for a fun family dinner tonight! It’s an easy, quick prep, kid-approved meal that gets everyone excited.

Ingredients

  • 1 bag, Russet potatoes

Toppings

  • ½ cup, Greek yogurt
  • 1 cup, chili (we use the soup bar at our grocery store)
  • 1 cup, pico de gallo
  • 1 cup, guacamole
  • 1 cup, shredded cheddar cheese
  • ½ cup, Mexican-style cheese
  • ¼ cup, bacon bits
  • 2 Tablespoons, chopped green onions

Preparation
Prep Time: 5min | Cook Time: 60min

  1. Preheat oven to 375 °F.
  2. Wash potatoes and pierce a few times with a fork.
  3. Bake potatoes for 60-70 mins, or until easily cut with a knife.
  4. Set-up potato bar with toppings in small bowls.
  5. Cut off tops of potatoes, and add any toppings you like!
