Ingredients

  • 4 russet potatoes, thinly sliced
  • 2 Tablespoons sesame oil
  • 2 Tablespoons soy sauce

  • 1/2-1 teaspoon fresh ginger, minced
  • 1 Tablespoon sesame seeds + more for garnish
+

Garnish

  • Cilantro & more sesame seeds

Preparation

  1. Earlier in the day or day before: Wash potatoes. Slice potatoes very thin using a mandolin.
  2. In a large bowl, combine sesame oil, soy sauce, lime juice, garlic and dash of cayenne. Add thinly sliced potatoes and toss to coat. Marinate for 30 minutes.
  3. When ready to start grill: Place on large piece of aluminum foil and sprinkle with ginger, about 1 tablespoon sesame seeds and, if you like spicy, add another dash of cayenne. Seal foil.
  4. Place over high heat on grill for 20 minutes. Open carefully to avoid being burned by steam. Place in serving bowl and sprinkle with sesame seeds.
  5. Serve beside Asian salmon, putting the salmon on the grill halfway through potato cooking time, and a Cucumber Tomato Salad.

Notes

Prep time is 10 minutes when slicing & marinating is done the day before or earlier the same day.
