Ingredients

  • 3 tablespoons olive oil
  • 1 clove garlic, minced
  • 2 teaspoons finely chopped fresh rosemary leaves
  • 1/2 teaspoon salt
  • 1 1/2 lbs. (about 4) unpeeled yellow potatoes, cut into 1/2 inch-thick slices.

Preparation

  1. Preheat grill.
  2. Combine oil, garlic, rosemary and salt in dish.
  3. Add yellow potato slices and turn until well coated.
  4. Grill potatoes for 8 minutes or until soft.
  5. Turn and continue grilling 10 minutes longer or until cooked through.
  6. Remove from grill and serve.

This is a family favorite in our home. We do them camping often, but we add minced or chopped garlic into a zip lock bag with the herbs and oil. Throw it into the cooler until ready to grill.
