Hassleback Potatoes with Aged Hard Cheese


  • 4 medium sized purple potatoes
  • Course sea salt
  • Arugula
  • 2 ounces good quality extra virgin olive oil
  • Edible flowers


  1. Slice purple potatoes the short way approx. 1/8 to 1/4 inch apart
  2. Season between each slice without breaking the potato olive oil/salt
  3. Bake in a hot oven until done
  4. Place arugula, drizzle with olive oil
  5. Microplane hard cheese & decorate with edible flowers
