  • 4 cups frozen potato curly fries
  • 1 cup roasted peanuts
  • 2 Tablespoons olive oil
  • 4 Tablespoons chopped fresh mint
  • 1 Tablespoon sesame oil
  • 2 Tablespoons lime juice
  • 3 Tablespoons soy sauce
  • 1 Tablespoon chiles in oil
  • 1 clove of garlic
  • Frying oil


  1. Heat oil on high; fry potatoes until golden brown; drain on paper towels.
  2. In a blender, mix peanuts, soy sauce, garlic, chiles, lime juice, and sesame oil; season with salt and pepper; set aside.
  3. Mix mint and olive oil.
  4. Serve potatoes; add peanut dressing and some mint oil.
