Starchy Vegetables: Roasted Potatoes


50 Servings

  • 10 lbs. 7 ounces yellow potatoes
  • 1 ounce Kosher salt
  • 1/2 cup olive oil blend

100 Servings

  • 20 lbs. 14 ounces yellow potatoes
  • 2 ounces Kosher salt
  • 1 cup olive oil blend


  1. Preheat oven to 375°F.
  2. Scrub potatoes and cut them into large dices or wedges
  3. Toss the potatoes with salt and oil.
  4. Place 8 pounds of potatoes on each parchment-lined sheet pan.
  5. Roast in the preheated oven for about 40 minutes, or until they are browned and tender.
  6. Hold hot at or above 140°F until ready to serve.
