The salt-rich city of Syracuse, NY is also home to the delicious salt potatoes that melt in your mouth. Give them a try!

Ingredients

  • 1 lb. New potatoes
  • ½ cup Kosher salt
  • Butter, melted
  • Salt and pepper
  • Various fresh herbs

Preparation

  1. Wash the potatoes carefully, getting them completely clean without scrubbing off the thin skin.
  2. Bring water to boil in a large saucepan. Stir in the salt, stir until it is fully dissolved. Add potatoes.
  3. Bring water to a rolling boil, and boil – not simmer – for around 20 minutes or until potatoes are done.
  4. Drain, and serve immediately with melted butter salt pepper and herbs.
