Creamy potato salad studded with bacon, scallions, cheddar cheese, and sour cream, perfect for a picnic.


  • 4 medium yellow potatoes
  • 5 slices (2.5 ounces or 75g) Bacon, cooked, chopped
  • 3 each (55g) Green Onions
  • 1/3 cup (78g) shredded Cheddar Cheese
  • 2/3 cup (160ml) Mayonnaise
  • 2/3 cup (160ml) Light Sour Cream
  • ½ tsp (~1g) garlic powder
  • 1 tsp (~1g) Sea Salt
  • 1 tsp (~1g) Black Pepper, ground pepper

Prep Time: 20min | Cook Time: 20min

  1. Add your yellow potatoes to a pot of cold, salted water.
  2. Boil until easily pierced with a fork, drain and rinse in cool water. Allow the potatoes to cool completely before adding the other ingredients.
  3. Add all remaining ingredients to the potatoes, mix, and smash potatoes with a fork until well combined. Place in the refrigerator for 3-4 hours prior to serving or until well chilled.
  4. Enjoy this salad with all your favorite picnic foods.


  • You can make the potato salad 24 hours in advance to prepare for parties

  • Other types of potatoes also work well in potato salads
