Russet potatoes gently folded together with milk and butter for a perfect and comforting cloud-like mashed potatoes.


  • 4 lbs Russet Potatoes
  • 2 cups Whole Milk
  • 12 tablespoons Unsalted Butter, softened
  • As Needed Kosher Salt
  • As Needed Freshly Ground Black Pepper

Essential Equipment:

  • Large Bowl
  • Dutch Oven or Large Stock Pot
  • Colander
  • Potato Ricer or Food Mill
  • Rubber Spatula
  1. Peel the potatoes and cut them into 1-2-inch dices (the size of the dices should be like one another to ensure even cooking). Transfer the potatoes to a bowl of cold water and rinse them 2-3 times until the water runs clear, this process helps remove excess starch.

  2. In a large stockpot, bring 4 quarts of water to a boil over high heat. Add the potatoes and cook them until they are completely tender.  Drain the potatoes in a colander and rinse them lightly for about 30 seconds with hot water, allow them to drain/release steam for about 1-2 minutes.

  3. Place a ricer or food mill over another pot and pass the potatoes through it.  Add the milk and the butter to the potatoes and gently stir.  Adjust the seasoning with the salt and pepper, keep the potatoes warm until ready to serve.
