Favorite Potato Recipe or Potato Hack: The child nutrition staff at Farmdale Elementary School saw a need for more menu variety and knew a great way to test new recipes for the upcoming school year was during their Summer Food Service Program (SFSP). With over 200 hungry students, three custom potato recipes and a table with giveaways, games, and educational materials, the students of the Weaver School District in Merced, California now have more to look forward to when they go back to school in the fall. One of the recipes tested will now be on the permanent lunch menu. In addition to providing custom potato recipes, Potatoes USA set up an engaging educational component to supplement the SFSP promoting the Potatoes Power Performance WAYE messaging.

Recipes included:

  1. Firecracker Stick with a Greek yogurt ranch dipping sauce
  2. Kung Foo Potato Cilantro Ranch Chicken Salad Sandwich (pictured)
  3. Burritos de Papa

 

According to the 2019 School Nutrition Trends Report by the School Nutrition Association, about one-half (49.9%) of the district’s plan to offer new menu items that feature international flavors for school year 2019/20 (1).  An additional 21.3% are considering doing so or testing potential new items. Ease your way into students’ meals with this blended sandwich with diced wedges mixed with a cilantro ranch chicken salad, topped with Korean BBQ sauce to create a chilled sandwich. Served-cold, this recipe is a great addition to any grab and go or a-la-carte menu and even served during after school meals.
